Our inaugural release took a lot to put together and making wine in small batches is a labour of love.
We want the wines to be accessible and on your table, to be able to share the Dell’uva story with you and show how the Dell’uva ethos reaches through the vineyard and into your glass.

Barbera is the most widely planted grape in Northern Italy, although is now widely planted all over Italy.
Long considered distinctly inferior to Nebbiolo, Barbera is growing in reputation, with some renditions challenging the best of Nebbiolo. At Dell’uva Wines our Barbera yields are regulated to produce serious renditions of this variety.
The bouquet of our Dell'uva Wines Barbera goes from red cherry and blackberry through to currant. Colour is ruby-red with fresh mulberry and pleasant spicy hints on the palate. Great structure, freshness and elegance.
This Syrah is made from clones imported from France, which are uniquely different to our Australian Barossa Shiraz clones. The style and flavor profile of Syrah made at Dell'uva Wines from these clones tend to be medium to full bodied and display softer tannins and flavors of blackberry, mint and black pepper notes, as distinct from our Barossa Shiraz that is more consistently full-bodied with medium to high levels of tannins, jammier fruit and spice notes of liquorice and earthy leather.
Our Dell'uva Wines Syrah has a garnet-red colour, aromas of ripe plums and blackcurrants with a hint of French oak. Great mouth feel with plums, black fruits a hint of aniseed and soft velvety tannin finish.
Grenache was made famous by French wines, and is also called Garnacha in Spain. Grenache was one of the first varieties to be introduced to Australia in the 18th century and eventually became the country's most widely planted red wine grape variety until it was surpassed by Shiraz in the mid 1960s. Early Australian Grenache was a main component in the sweet fortified wines that were the lynchpin of the early Australian wine industry. Grenache is now becoming popular in Australia like its French counterparts as a high quality red wine. At Dell’uva Estate we grow a range of Australian Grenache clonal selections and some imported Garnacha clones from Spain. Dell’uva Wines also has access to 93 year old, dry grown, old bush vine Grenache.
Grenache exhibits slightly perfumed wild cherry aromatics, cherry red in colour with soft juicy raspberry and forest berry flavours. It has a spiced, nutmeg note on the soft finish.
Lagrein is a red wine grape variety native to the valleys of northern Italy near the border with Austria. Few things are simple in north-eastern Italy, least of all Lagrein, a red grape that can produce fresh, aromatic, highly seductive wines. When grown in cooler regions of Australia Lagrein can be highly tannic but here at Dell’uva Wines in the Western Ridge of the Barossa it produces exceptional, balanced wines.
Lagrein has a rich perfumed aroma with dark inky colour. It’s a medium to full bodied wine, rich in texture with blackberry, spice and savoury tobacco/leather/mushroom notes, and has excellent fruit integration with the French oak.
Frill Hill Shiraz 2015
Frill Hill Shiraz 2015
Perfectly expressive of Barossa Shiraz, with power but elegance. Dark fruits, with a hint of oak, and a fine tannin structure.
Gungellan GSM 2013
Gungellan GSM 2013
Juicy, layered, and a hint of structure. Tannins are fine, leaving the wine to be driven by fruit character. All about the Grenache, with a supporting role from the Shiraz and Mourvedre.
Not your usual Merlot. One of the classic varieties, Merlot when treated with care has an intensity of character, with fine structure, and integrated tannins. Powerful - but with grace.
Dolcetto is a black wine grape variety widely grown in the northwest Italy. In Italy Dolcettos are now being made in a bigger, bolder styles resulting in more age-worthy wines. Some producers are using new and old oak to age the wines. As a result, there are various styles of Dolcetto in the market place. The better ones by far are the more modern interpretations. Here in Australia, Dolcetto is used mainly for making Rosé styles but at Dell’uva Wines we are leading the charge in making Dolcetto in this bold, modern interpretation.
Dolcetto has a fresh dark cherry, fruity bouquet and intense ruby-red colour; the palate shows delicate red fruits, a silken texture and a soft round finish. The second vintage of this we have produced, the variety continues to astound, showing elegance with a prettiness of fruit, but structure and a firm palate.
Touriga Nacional 2015
Touriga Nacional 2015
Touriga Nacional is considered by many, to be Portugal's finest varietal. It is increasingly being used as a table wine.
Dense red in colour with very aromatic dark cherry and fruits combine with concentrated flavours of dark fruits and spice. Complex tannins give body and structure to the wine.
At home in Italy, the Sangiovese grape enjoys the long, slow summers here in the Barossa. The grape needs a long ripening period to develop the layers of spice and character which are best shown with food. Fine acids and tannin round out the wine, with a savoury mid-palate matching the ripe fruits.
Grenache can be such a chameleon - from luscious, almost-but-not-quite-sweet rosé styles, through to dense, chewy styles high in alcohol and tannin. And everything in between. Our grenache, as with all of our wines, is a food wine. Balanced purity of fruit, with fine tannins, and hint of acid livening the palate, and a delicacy. However, she is not shy - rather leaping out of the glass with a vibrant aroma, and following through with notes of wild herbs, deep plum and bright cassis, with a savoury edge. A wine to keep, perhaps.
PRIMITIVO:- The earliest knowledge of this varietal is that it originated in Greece. It is not known exactly how or when this plant was transported into Italy, but the history of this grape in Italy dates back many centuries. In the 17th century, it is known that the Benedictine monks named the varietal "Primitivo" because of its precociousness (early maturity of the grape) in this zone. Primitivo is widely spread throughout the north/eastern coast of central Italy. The climate is always warm and sunny, making our Western Ridge Barossa Dell’uva Wines estate vineyard the perfect environment for growing Primitivo. See my blog :- Are ZINFANDEL and PRIMITIVO the same?
Primitivo displays rich fruity scents with peppery, spicy overtones. Colour is garnet-red with a rich palate of blackberry, black olives, chocolate and mixed spices. It finishes with soft velvety tannins, and a lingering palate. A long, slow ripening period is key, with a care to ensure the fruit sugars remain relatively low. Again - a food wine. The spice character in the wine is quite distinctive, balanced by an earthy character and a fine acid lift on the finish. This wine will evolve in the bottle over many years to come.
Graciano is a black-skinned grape variety that is rarely seen outside its home territory in northern Spain. Graciano is one of those grape varieties that is more likely to be found on the back label than the front. It is highly prized for its intense aromatic properties, but notoriously low-yielding in the vineyard. Consequently, it is not widely planted and typically appears alongside Tempranillo and Garnacha in various interpretations of the red Spanish blends. At Dell’uva Wines we live with Graciano’s low yields, but are rewarded with the most delicious of wines.
A low-yielding grape variety, Graciano is layers of luscious dark fruits, silken tannins, and a fine, nervy acid. Persistent, velvety, and lush, our Graciano will age happily for quite some years. Concise tannin and acid, with a finely balanced oak profile and generosity of fruit have created a wine clearly expressive of site and variety.
Nero d'Avola 2016
Nero d'Avola 2016
Originating in Sicily, Nero d'Avola is familiar with a long summer. Defined by drying tannins, Nero can be hard to match with food, however our style is picked at an optimal ripeness to deliver the fruit required to balance that tannin. Bright, vibrant, with crimson notes and cherry hints, Nero is incredibly perfumed, with a nervy acid structure. A wine to delight and perhaps even surprise the palate.
A Spanish grape variety best known for a highly lifted aroma, Mencia is something rather different in the wine landscape. With careful vine management, the wine produced has an elegance and vibrant perfume. Violets and anise on the nose, young blood plums on the palate, with a finely integrated tannin structure. We are looking forward to the evolution of this variety in Australia.
Montepulciano is Italy's second most widely dispersed indigenous grape variety, widely planted throughout central and southern Italy.
It should not be confused with the similarly named Tuscan town named Montepulciano, wines from around that town are predominantly made from Sangiovese.
Montepulciano is well suited to our Dell’uva estate vineyard here in the Western Ridge of the Barossa as it is rarely found in northern Italy; it ripens late and can be excessively "green" if grown in cooler regions. Montepulciano is a permitted variety in DOC wines produced in 20 of Italy's 95 provinces.
Montepulciano is full bodied with great structure and balanced tannins, inky-purple colour with blackberry aromas and rich dark berry palate with spice. Hints of chocolate and vanilla from the French Oak, rich with plenty of character, this wine will last for years to come.
Cabernet Sauvignon 2015
Cabernet Sauvignon 2015
This Cabernet Sauvignon displays lovely aromas of black fruits, coffee and spices. A soft full palate of black berries and black currants with fine tannins results in a long finish. A wine to enjoy and savour.
A new varietal that we have added to our range which originates from Italy.
A delightful nose of red cherries, mulberries and potpourri, leads to a palate of Turkish delight and sweet red fruits with refinied tannins.
We have five clones of Tempranillo growing at Dell'uva Wines estate vineyard that produce this exceptional food friendly wine.
Tempranillo has been grown on the Iberian Peninsula since the time of Phoenician settlements. It is often referred to as Spain's noble grape. The grape has been planted throughout the globe. Tempranillo has a relatively neutral profile so it is often blended with other varieties, such as Garnacha and Mazuelo.
Ruby red in colour with aromas of plum, tobacco and herbs. Flavours of raspberry, cherry, clove and chocolate on the palate. Lovely balanced tannins and a mild, smooth finish.
The Verdicchio vine has been cultivated in the regions of east central Italy, to which it is probably native, since the 1300s, but virtually nowhere else. Named for the yellow-green hue of the grapes. Verdicchio is “the favourite son” making it the most important white grape in the east central region of Italy.
At Dell’uva Wines estate vineyard we were the first South Australia producer of Verdicchio. Depending on vinification techniques Verdicchio wines can be rich in bouquet and structure, sometimes even capable of ageing for ten years or more.
Verdicchio’s pale colour, the nose displays floral, perfume and lavender with some of those pink/purple confectionery lollies from way back. wonderful flavours of dried mango and a soft finish on the palette rounds out this lovely varietal. this wine is a superb match with Asian and spicy foods.
Sparkling uva Loca 2017
Sparkling uva Loca 2017
Our Sparkling uva Loca is a unique blend of Pinot Noir and Vermentino. The resulting vibrant coloured wine is full of flavour and character, exhibiting lovely strawberries and cream. A great celebration wine, served chilled on a sunny day.
