This lovely variety from Sicily Nero d'Avola is made in the traditional amphora - a bees waxed lined ceramic vessel which helps to lift the aromatic qualities of the wine. So, a natural ferment, in a breathing vessel. Using these ceramic vessels heightens the aromatics in the wines, and retains a vibrant palate profile. This wine is a little unusual at first as it has had 145 days of skin contact but is a great way to showcase excellent quality fruit.
Nero d'Avola is an Italian grape variety, most commonly found in Sicily. A dry style, with firm tannins, the fermentation in amphora leaves a lifted, highly aromatic wine, suited to lighter meats and oily fish, hard cheeses and cured meats.
